Kim's Tasty Tuna

This is a recipe I threw together a long time ago. I still use it whenever I need a quick snack or meal. It’s especially great for those who aren’t tuna + relish fans.
    Ingredients
  • 1 6-ounce can of tuna
  • 2 tablespoons mayonnaise
  • ½ teaspoon garlic powder or finely minced fresh garlic
  • 1 teaspoon parsley, preferably fresh, although dry is all right
  • 2 tablespoons grated/shredded cheese (parmesan, white cheddar, or another sharp kind)
    Directions
  1. Carefully open the can of tuna and drain the liquid out.
  2. Place the tuna and mayonnaise into a small mixing bowl. Mix the two together, making sure to separate the tuna (unless you prefer it chunky) into small pieces.
  3. Add the garlic, parsley, and cheese. Mix well.
  4. Use this mixture for one of the dishes below.
Tuna and Crackers
Serve the tuna mixture with your favorite crackers. Water crackers, soda crackers, and saltines work very well. This makes a great snack that you could pack for your break during school or work. Here is a picture of the dish I made tonight. I used a combination of parmesan, monterey jack, asadero, and cheddar.

Tuna Melt (yields 2 sandwiches)
Spread the tuna mixture onto slices of your favorite bread. Place the sandwich on a sandwich iron, grill, or pan over the stove. Heat until the bread is golden and/or the cheese melts.

Niçoise Salad (yields 4 servings)
Add niçoise olives, potatoes (boiled and diced), onions (minced), and green beans to the tuna mixture detailed above. Serve over your favorite salad greens along with lemon vinaigrette. Garnish with tomatoes and/or hard-boiled eggs (diced).
