Your questions have been answered in this thread... but here are the basics:
If you collect every piece of a picture, it doesn't automatically get converted. You have to click on "convert this image into a fantastic random item!"
If you have collected every piece of a picture but haven't yet converted it, and you win another hourly competition for that world, you will get a neomail saying you won but that you have already collected all the pieces, so none were awarded. This also seems to apply if you have the pieces in your inventory but not the picture itself (at least sometimes).
If you remove just one piece and then win an hourly competition, you will re-win the piece you removed. It never tries to give you pieces you already have.
Once you convert a picture, you can't remove the pieces, and you can't win any more pieces of that picture, even if you come in first in a competition or get the highest score. You're done.
Because of the above, many people will collect a full picture in the world they're good at, then trade it for another world and convert that one instead. They can then re-win the world they're good at. You can do this over and over if you want to convert every world.

Wow cranberry, you really summed things up nicely in that post. I think I will just copy and paste it next time somebody asks about the WC's. (If you don't mind.)

Take note of the very crappy codestone prizes on the list. A LOT of people have been reporting getting those and I think it's outragous and rather cruel for TNT to have set those as prizes. The World Challenge pictures aren't like the Treasure Map pieces that you get through random events and don't have to work for. You have to do a lot of work and spend alot of time to earn the WC pieces so I really think everybody deserves something more expensive than a codestone.

And wow, I didn't know people were getitng codestones as prizes! That's awful! I thought my purple petpet paint brush was bad enough.

I don't know if it's been posted yet, but if you get the highest score, as well as being in the top ___ scores, you get two pieces. (which is quite fun. 
)

Well, I am starting to try and sell my map pieces. I have a few terror mountain and neopian central bits available. I think that I am better off just selling them (assuming that people are actually buying) rather than cashing them in for a (probably crappy knowing my luck) prize.

People are buying, but they're not paying as much. Pieces I sold for 34-45K a week ago are going for around 15-20K now.

In another 10 minutes, I will have earned every piece of the Neopia Central picture... then I'm taking those pieces and selling them all... Then I'll get another 20, stick them in my SD (I like to put some of everything in there *shrug*) then I'll get 18 and get 2 at a time and sell them
I get all my pieces from Mootix Drop... I usually get both Highest score and in the top 3.
What I may do at some point, since I'm assuming the prices will go down, is I will take the money I get from Neopia pieces and complete all the other world pics...

Is there any correlation between the prize and the type of map you convert? Say, Faerieland map for a Faerie Paint Brush or something?
Also, are some maps more valuable than others? Looking around, it seems like every piece is priced between 15K - 40K, regardless of what world it's from. Perhaps this is because no one knows what to price them at.

From what I've seen there is not. The person who won the Faerie Paint Brush got for Neopian Central. The Christmas Paint Brush came from Tyrannia and the Symol (a Medieval petpet) came from the Haunted Woods.
I've completed 6 worlds so far and these were my prizes:
Starry Paint Brush - Terror Mountain
Pink Paint Brush - Haunted Woods
Rainbow Paint Brush - Neopian Central
Scritchy Sketchy Paint Brush - Tyrannia
Glowing Petpet Paint Brush - Virtupets Space Station
Christmas Petpet Paint Brush - Meridell
Note that they were all paint brushes of some kind. I clicked the "Convert" button on the 55th second of the minute all 5 times. I don't know if it made a difference but I haven't gotten a codestone yet.

Since I'm not good at games (I never have been), I entered around 9 times. Got Tyrannia Piece 1.1 for my troubles and got my arse kicked the other 8 times.
Got annoyed, bought the rest...and got ripped off. My prize? 2k and a Purple Petpet Paint Brush. I now have 280.8k to re-earn. Lucky me. I've given up on this whole venture -_-;;;

I just completed the World Challenge picture for Neopia Central last night at around 1am.. I think I should have sold some pieces and then re-earned them because the only game I'm remotely good at is Petpetsitter.. one can only pay attention to petpets for so long before they start going insane o.o Ah well, I did win 2,000np and a Whinny.. I was hoping for a Faerie Paint Brush but I knew the odds of that were very slim.. I guess a Whinny's not too bad since I only had to buy the last piece (haha, I got a bit impatient) for 17,500
