Edit: No, you're right. 9 points....
A lot of the suns I'm seeing have only 8 points, including the two in the Altador page banners (well, they would if we saw the whole sun), the ones in the book, the sun on the floor of the Archives, etc. The weapons seem to have either 6 or 8 points; the 6 pointed suns are much smaller and made up of two triangels, but the 8 pointers look very much like the suns that decorate the city. Even the city itself seems to have 8 points (there are 8 walls surrounding it, which form 8 "points").
Anyway, 8 seems to be the most common number I'm seeing, so I'm willing to bet that it's the "official" symbol, and that all the other suns are variations of it. As for what that means... I have no idea.

its a bit tiny but those are the suns and the all the different points people have found.....
