I believe they're taken from the Neo dictionary, i.e. the same one used for games such as Eliv Thade. That dictionary has pretty much all normal words in it, so I guess any old word could be picked as word of the day

'Hi' itself has no significant connection to neopets, but the word does exist in neopia so it is eligible to be the word of the day.

Theres a thing where you can submit a word for word of the day, so it probably just selects one at random, which would account for the spelling mistakes!

Well supposedly when this started, they mentioned if you put the word of the day in something like Storytelling or the Caption Contest you would get a prize. I never heard it happening so I suppose that it's useless.

I suppose "hi" could also be related to that random event where a poogle (or something) hops up and says "Hi!" I hate that one..
