There's a ton that aren't taken, go through the whole thread again, I know mine isn't adopted yet, and waiting for that one to go before putting up another one on the thread.

Just because a pet on Neopets has an owner, it doesn't mean that it's been adopted. As long as it's in this thread without an 'adopted' sign on it, it's open. There are plenty on this page alone. You just have to apply to the owners via PM or Neomail (Whichever they prefer).

...I don't have anything up at the moment, because my labbing is being taken up with Kylinth... I really, really want her/him turned into a Hissi...

The pets listed in the Adoption link aren't already in the pound. Their current owners are holding onto them until they find a good owner to transfer the pet to. So, you have to send a Private Message or Neomail to the person who is putting their pet up for adoption. Then wait for that person to get back to you. Then set up a time when you are going to do the transfer.
